Herb Popovers

break out
of frames

  •     2 large eggs
  •     2 egg whites
  •     1 cup skim milk
  •     1 tablespoon low calorie stick margarine
  •     1 cup all-purpose flour
  •     1/4 teaspoon salt
  •     1 teaspoon basil
  •     1 teaspoon oregano
  •     1 teaspoon thyme
In a SMALL bowl, whisk the eggs until mixed, then add the melted butter and milk.

In a LARGE bowl, mix together the flour, salt, and pepper.

Stir the milk mixture into the flour mixture, stirring the batter until just mixed.   Add the basil, oregano, and thyme.   (Do not overbeat.)

In a preheated 425°F oven, heat a popover pan for 5 minutes, or until it is hot.   Spray or brush the cups with canola oil, and fill them half full with the batter.

Bake the popovers for 15 minutes at 425°.   Reduce heat to 350° and bake an additional 25 to 30 minutes or until popovers are crusty and brown.

Serve immediately. Makes 6 popovers.
