Corn Popovers

break out

  •     1 cup all-purpose flour
  •     1 tablespoon coarse yellow cornmeal
  •     1 teaspoon sugar
  •     1/4 teaspoon salt
  •     pepper to taste
  •     3 extra large eggs
  •     1 cup milk
  •     1 tablespoon melted unsalted butter
  •     1/2 cup corn
  •     1 tablespoon fresh chopped chives
In a LARGE bowl, mix together the flour, corn meal, sugar, pepper and salt.

In a SMALL bowl, whisk together the eggs, butter and milk.

Stir the milk mixture into the flour mixture, stirring the batter until just mixed.   Add the corn and chives.   (Do not overbeat.)

In a preheated 425°F. oven, heat a popover pan for 5 minutes, or until it is hot.   Brush the cups with melted butter, and fill them half full with the batter.

Bake the popovers in the middle of the oven for 25 to 30 minutes.

Serve immediately.
