In a small bowl, whisk eggs until they change color. Mix the flour, sugar and salt. In a large bowl, mash the rice.   Add the eggs. Alternately mix in the flour mixture and milk, stirring after each addition until just mixed.   (Do not overbeat.) Heat popover pan until hot.   Brush pan with melted butter.   Fill popover cups about half-full. Bake 15 minutes.   Reduce the heat to 350°F and bake 20 minutes longer. Serve immediately. return to top |
