In a SMALLER bowl, whisk together the eggs, oil and milk. Stir the milk mixture into the flour mixture, stirring the batter until just mixed. (Do not overbeat.) Gently fold the provolone cheese into the batter. In a preheated 450°F oven, heat a popover pan for 5 minutes, or until it is hot. Brush the cups with melted butter, and fill them half full with the batter. Bake the popovers in the middle of the oven for 20 minutes. Turn down the oven heat to 375°F and bake for an additional 20 minutes. Serve immediately. return to top |
