Adam Watson's theater career began at the age of twenty-one; in 1995, his play The Birdbath was produced by Bunbury Theatre. In 2001, he published two books, Lollygagged and Flannel Flogged (a book of poetry) and Frighten the Horses and Other Plays.

In 2002, he made his first panel appearance at ConGlomeration, and was the writer / director / producer / Narrator / webmaster of The Rocky Horror Radio Show, a live musical drama broadcast on WFPK.

In April 2003, Watson directed his play Your Browser Refreshes Every Thirty Seconds at the Rudyard Kipling, and also read some of his poetry; this was Jackpot Tiger's first official production. In August 2003, Adam led several panels and presentations at ConGlomeration. On Halloween Night, WFPK broadcast Jackpot Tiger's first radio production Live From Waverly Hills, an original thriller set in Waverly Hills Sanatorium.Once again, Adam was the show's writer, director, and producer. Mark Borchardt, director / writer of Coven, star of the award-winning documentary American Movie, and actor of such films as Jet Li's The One, said: "The production [of Waverly Hills] was so well accomplished that not knowing at first if it was fact or fiction, I bought into it as a real event. The actors, as well as the technical rendering, were superb. A definite congratulations to Adam Watson and his crew."

In February and March 2004, Watson's play A Richard Donner Heaven debuted as part of the 2004 Louisville Playwright Festival.Mike Lerner, in his review posted at LouisvilleMojo.com, said: "A sweet play . . . the playwright did a good job of building two characters in a star-crossed love affair."

In July 2004, Watson was the Playwright Advisor in Kentucky Opera's VISIONS program, an innovative project where high school students write an original libretto honoring a prominant Kentuckian; the finished opera was performed at Kentucky Center's Bomhard Theater in May 2005. Also in July, Browser made a second run at the Rud (directed and produced by John Hetzel) and his poetry was published in the July Vol. 3 edition of the lit mag Churches, Banks and Bars. In August, Adam gave an encore presentation of Live From Waverly Hills (as well as leading a "Making Of" panel) at ConGlomeration. In December, his poetry joined the gallery of artists at Insomniacathon 2004, the online version of the popular poetry and music festival.

In April 2005, Watson tackled one of his most ambitious theatrical productions to date: fulfilling multiple roles for Clive Barker's The History of the Devil at the Kentucky Center's MeX Theater. He was the show's Production Manager, Assistant Stage Manager, and Webmaster. In addition to overwhelmingly positive audience feedback, the show set a new MeX record: most tickets sold for a four-night run.

In August 2006, Watson returned to the director's chair with A Richard Donner Heaven, in its second appearance at the Rud.

From 2005 to 2008, Watson directed and produced several theatrical works at two different high schools, including such classics as Little Shop of Horrors, The Glass Menagerie, The Wizard of Oz, and The Odd Couple. (In fact, at each school, it was the first time in several years that a full-book musical had been staged.)

Watson was commissioned by Juergen Tossmann to write a play for Bunbury Theatre's The Honest Abe 23 Minute Play Festival. His one-act Occasional Poisonings from the Kitchen premiered on Bunbury's stage in February 2009. He also filmed, edited, and designed the Festival's DVD.
