GRANITA DI LIMONE
LEMON ICE

Juice of 12 lemons
5 cups water
2 cups sugar
rind of 2 lemons, grated
1 egg white

Squeeze lemons and discard seeds and skins. Combine water and sugar in a suacepan. Bring to a boil and boil gently for 5 minutes. Cool. Stir in lemon juice and rine. Using whisk, beat egg white. Pour mixture into ice cube trays or frezer container.

When limon ice is semifrozen (2 - 3 hours), remove from freezwe, transfer to bowl and beat for 1 minute. Pour back into container and freeze.
