ITALIAN SALISBURY STEAK

Serves 4.

1 lb lean ground beef
1/4 cup seasoned dry breadcrumbs
1/4 cup water
1 egg, slightly beaten
1/2 tsp salt
1/4 tsp pepper
1/4 cup Italian dressing
2 cups thinly sliced onions
1 cup thinly sliced mushrooms
8 oz tomato sauce
1/2 tsp dried basil

Preheat oven to 350 degrees F. In a medium bowl, combine ground beef, breadcrumbs, water, egg, salt, and pepper. Shape into four patties. Place in a 1-1/2 quart oblong baking dish. Set aside.

In a medium skillet, heat Italian dressing. Saute onions and mushrooms in dressing over medium heat for 5 minutes, until tender, stirring occasionally. Stir in tomato sauce and basil. Spoon tomato mixture over patties. Bake 30 minutes.

Per serving: 467 calories, 32 g fat, 138 mg cholesterol, 19 g carbohydrates, 2 g fiber, 25 g protein, 1021 mg sodium. With fat-free Italian dressing: 405 calories, 25 g fat

Bistecca Impanata alla Griglia
Breaded and Broiled Sicilian Steak

Serves 4.

Marinade:
1 cup olive oil
˝ cup wine vinegar
6 basil leaves (or 1 t. dried
2 cloves garlic, minced
1 teaspoon salt
˝ t. freshly ground black pepper
4 boned sirloin steaks
Breading:
1 ˝ cups bread crumbs
˝ cup grated Parmesan cheese
1 t. orégano

Blend oil, vinegar, basil, garlic, salt, and pepper together. Place steaks in marinade and marinate for 2 hours or overnight, turning occasionally. Preheat broiler. Combine breading ingredients. dip steaks in breading, coating both sides will. Place on an oiled broiler pan 3 inches from flame. Broil to desired rareness and serve immediately on warm plates.
